What's with the name?

"Henry & Laffite" is a reference to two attractions: The Country Bear Jamboree, and The Pirates of the Caribbean.

Henry was the name of the host of the Jamboree.

Laffite's Landing is the name of the dock from where boats depart into Pirates of the Caribbean at Disneyland.
